Interesting idea. Presently more then 1 manufacturer makes wings or entire radio control model airplanes out of corrugated plastic sheet. It's relatively tough material for its weight and it doesn't shatter when the model gets crashed.
You could easily fold a birdhouse out of one large sheet if you score the lines which you want to fold.
The air spaces in the individual cells would make good isnulatoin, and, if I was going to build a birdhuose out of the stuff I would avoid translucent corrugated plastic like the US Mail uses for letter boxes becuase it would probably get too hot inside.
